    Roast chicken w truffle oil! Roast with onions garlic and seasoning. Drizzle with truffle oil and baste throughout cooking. 425 for about 1 hr 15 min

    This might sound crazy, but although I’m vegetarian, I make this pie I think of as my version of a chicken dinner. The flavors and textures are all reminiscent of chicken, in many ways. It’s a deep pie, with lemon zest and ground black pepper in the crust, and a filling of roasted chickpeas, roasted mushrooms, shallots, tarragon and smoked gouda. Can’t you just imagine all of those things with chicken…but you don’t need the chicken!
