Miami and New York are my favorite cities in the U.S. to go out in. And for me, the number one thing is the atmosphere of a place. My business partner, A.D. Allushi, and I started traveling together because he’s from Europe, as well. We realized we had the same taste and then had this same idea that we needed a lounge in Atlanta, because we didn’t have one. Of course, there are a bunch of restaurants and clubs, but there weren’t that many lounges that served food and were open late. Since our games finish at 10 p.m. or later, most of the restaurants in the area are closed. So A.D. and I decided to come up with the concept for the Bottle Bar.Pachulia took time off the court to talk to Gourmet Live about his inspiration for owning a restaurant, his favorite post-game eats and his dream dinner date with Al Pacino. It’s more of an “eat to live” mentality on the road. We eat a lot of catering backstage at shows, and mostly it’s good, but not life changing! On January 24, 1981, my mother had a dinner party. She served mushrooms Berkeley, Creole bouillabaisse, a green salad and pear and ginger pie. She used her white plates—Arzberg Athena, a wedding gift from my grandparents—and a yellow Marimekko cloth probably bought at Design Research. On April 19, 1987 she also had a dinner party. She served cantaloupe soup, poached rainbow trout and strawberries with sour cream. The plates were Della Robbia and the centerpiece was hand-dyed Easter eggs.
How do I know this? My mother has kept a notebook of every dinner party she has hosted since 1979: menu, guests, cloths and flowers, and typically notes on recipes and sources. Those mushrooms were from the Vegetarian Epicure, newly popular in Cambridge circles. Previous years she relied heavily on Ada Boni’s Italian Regional Cooking, plus James Beard, the New York Times Cookbook, and Cooking for Crowds by local Merry White. Her notebook meant no one would be served Creole bouillabaisse twice at our house. That (once we moved to Durham) the political scientists from Duke might meet some political scientists from UNC, or some neighbors from down the block. Continue reading

For the Love of Italy

Louise Fili is one of our foremost graphic designers. She specializes in food-related logos, restaurant identities and packaging, and has also designed more than two thousand book covers.
Her work is not nostalgic. It’s a conscious aesthetic, honed by years of regular travel to Italy, and it is highly specific. Starting in the 1970s Fili has been obsessively documenting the vestiges of classic Italian design on overlooked shop signs and beach billboards her packaging, logos and book designs are evocative of these past forms. In other words, Fili excavates the past in order to put it to ultra contemporary usage.
Gourmet Live guest columnist Adam Harrison Levy explores the inspiration behind Fili’s work, which all began with a billboard in Milan and a love for all things culinary.

… this summer, I tried to cook from a recipe on my iPad that showed you pictures of each step of the recipe, so I figured, “This has got to be easy.” I tried making this chicken with gnocchi … Oh, it was bad. My wife said, “You know what? You should’ve started with something a little easier!” But at some point, I’m going to learn how to cook and at least be able to man the grill, which I do a little of now.Grant Hill, 38, launched his NBA career in 1994 and quickly made his mark in the world of professional sports. One of his crowning achievements came just last month, when he became only the 15th active player in NBA history to score more than 16,000 career points. A once-devout follower of the macrobiotic diet, Hill, recently took a quick time-out to sit down with Gourmet Live and dish about his pregame diet, his one-time dessert vice and how he’s re-tuned his nutritional focus to favor the foods that maximize his energy and minimize inflammation.

It’s hard to imagine Americans praying to the Hamburger God or the Great Lord of Pizza, but that’s how seriously the Japanese take their rice. The country has thousands of shrines devoted to Inari, the celestial champion of fertility, prosperity, and yes, rice.
And while most Japanese don’t actively pray to the (ungendered, but ‘she’ for convenience) rice god, their bellies surely bow at her altar daily; from sake to miso to the gelatinous sweet called mochi; onigiri rice balls, sembai crackers, and soy-glazed rice cookies, not to mention the soft white pillow beneath your sushi.
My wife and I traveled to Japan in December, if not to romance the rice god, at least to taste her blessings. She didn’t disappoint. Continue reading
