A fabulous rainy Sunday dinner with a slow braised pork shoulder in apple juice, chicken stock, tomato sauce, red wine and herbs. Finished with roasted red peppers, carrots, apples, parsnips, onions and garlic. Served over creamy mashed potato’s and the wonderful reduction from the braising juices…..

Butternut squash cubed and tossed with tyme, pepper, salt , honey and a little canola oil. Bake on a greased pan and serve……
